This has got to be the easiest thing to make and it is so delicious. Before transitioning into a full vegan, I loved eating chicken salad. I wanted something cold to eat with crackers. I found a recipe for a chickpea salad sandwich and tried to make it but there were a lot of ingredients. I tried it a different way which can still be used as a sandwich or just with crackers.
Ingredients: Crushed Canned Chickpeas, Chopped Celery, Vegan mayonnaise, Salt & Pepper
Its that simple. Just crush the chickpeas with a chopper, blender or you can use a fork and mix it into a bowl. Next throw in the chopped celery and mayonnaise. I never measure anything because it’s suppose to be to your liking. Trust me this is very delicious.
