I am still learning to find vegan recipes. It was a lot harder than I expected because I also can’t eat nuts. I am allergic to nuts so it makes it even harder but I find a way. These are some of the recipes that I followed and loved. I found most of them on pinterest because it has everything. I will leave the link to every website and the names below. I found out that I like many different things that I never knew before. The best place to get most of these items will be at a whole foods but Walmart and Kroger also has many things.
- Creamy Roasted Red Pepper Chili
This is my all time favorite. I love chili now because of it. I have made this dish many times and I am actually eating some while typing this post. It is a really simple recipe and you will most likely have all the ingredients in your house. It takes around 30 minutes in total including the chopping and that’s it. Really simple and taste amazing.
2. Sauteed Soy Sauce and Mushroom Bok Choy (My Recipe)
You will love this dish if you love a fresh taste. I swear to you guys that I have never had bok choy before this. It taste so fresh and healthy. I started adding things to if and then ended up loving it. I came up with this simple recipe myself.
Recipe Ingredients: 1 Whole Bok Choy or Baby Bok Choy, Mushrooms, Chopped Garlic, 1 Tablespoon of Soy Sauce, 3 Tablespoon of Water, 1 Tablespoon of Olive Oil, Salt and Pepper (your preference), 1 tsp of Chili powder
Instructions: Start off by washing the bok choy thoroughly and cut the ends of each flap off. Using a saute pan, add the olive oil and add the garlic. Saute the garlic then add the mushrooms. Cook down the mushrooms and garlic on medium for about 1 minutes then add in the bok choy. Toss the bok choy around a couple of times to get all the bok choy on the heat then add in the water and soy sauce. Toss around and cover with a lid. Let cook on medium/high for about 5 minutes and check. Add the seasonings and stir around. Cook down for another 5 minutes and serve.
3. Cabbage and Udon Noodle Stir Fry
I tried this recipe last night and it was so good. The only thing you have do is add more cabbage. That is why it is a cabbage stir fry. In my recipe, I didn’t use enough cabbage. I only cut a small amount but it was still so good. I basically made a noodle dish.
4. Cheese Cake (The Best)
Guys, this cheese cake is so good. The recipe calls for a brand named tofutti that you can get at a whole foods. One thing I love is cheesecake, so when I became vegan, I was quite sad to give it up. I was happy that there many vegan cheesecake recipes to follow. The recipe is better after you set it in the freezer after. Personally, I hate soft cheesecakes. I like the cheesecakes more thicker and denser.
5. Tofu Egg Roll and Wonton Filling
I make these egg rolls and wontons a lot. I made this filling by stir frying tofu, shredded cabbage, peas and carrots, garlic and onion all together. Season with a little soy sauce, salt pepper, chili powder and red pepper flakes. supper easy.
These are just some of my favorites. I really love all of these and love to make them often. You guys should try them because they are healthy and easy to make. I can’t wait to show more of my favorites.
