I am doing well now but it was hard at first because I never wanted to go full vegan. I first stopped eating meat because I just wanted to focus on my health so I became a pescitarian. I can’t live without seafood but I have no choice now because I am allergic. The reason I became a full vegan is because I found out from the doctor that I am allergic to milk, eggs, nuts and fish. I was so shocked because I loved eating those but I can do without. Eating any of these, makes my face swell up really bad. Even though I can’t eat those items, I found many vegan products that are close enough.
I buy lots of vegan meat substitutes which are really good. I made my vegan chili and put it over some roasted potatoes and fell in love. It’s just so good. It’s also good over fries. I am not sad about the milk because milk isn’t that good for you, well at least processed milk isn’t. I found a recipe to make my own milk. I now drink and cook with oat milk, coconut milk and soy milk. Baking with coconut milk adds a natural sweetener which makes it taste so good.
The one thing that surprised me is that there are many items to choose from. I love fruits and vegetables but it’s more to it. I used to think that vegans can’t eat anything but I was very wrong. We can eat everything you guys can eat but it’s healthier. This is proof that everyone don’t need meat. It’s your mind that won’t let you. I am a proud vegan.
